Sweet and Smoky Aztec Apple Crepes

Whip up some

  • Cream and sugar

Cook up some

  • Bacon

Prepare

  • Cinnamon apples (we used canned Apple Pie filling)

Make some

  • Crepes

Slice thin and a layer a delicate amount of

  • Chipotle Pepper Jack cheese (Land O Lakes makes a great one)

in between two Crepes, and place back on crepe maker pan to melt. Top the crepe with lots of bacon (a strip or two would do nicely) and apples, roll, and top with whipped cream for a unique flavor experience.

The Chipotle Jack is not very spicy but rather has a rich, sweet, creamy, smoky taste. The trick is not to use too much cheese—cut it thin and spread it out. We’re going for subtle here, to blend with the sweet crispy smoky bacon taste.

How it came about

One morning Royal and I made crepes for breakfast/brunch. We got this idea to use apple pie filling and bacon while we were at the store (based on the apple sauce + sausage crepes recipe mentioned in the crepe recipe booklet). We whipped some whipped cream and cooked up some bacon and opened a can of apple pie filling and made a delicious batch of sort-of-savory crepes. Then I had this strange idea to add a bit of this Chipotle Jack cheese (the Aztec part) to the mix, since I thought the smoky cheese flavor would blend with the bacon. Royal had the idea to layer two thin crepes together and voila, an another zany original recipe.
