Creamy Chicken Chipotle Pepper Stew
4-8 servings
Ingredients:
- 2 peeled medium carrots, cut in coins
- 3 medium red potatoes, cut in cubes
- 1/2 large onion
- 1/2 large green pepper
- 1 can whole tomatoes, with tomato juice
- 10 oz. can white chicken
- 10 oz. can cream of chicken soup
- 14 oz. can chicken broth
- olive oil
- butter
- salt & pepper
- TABASCO Chipotle Sauce
- Cajun Seasoning (a blend of paprika, red, black, white peppers, oregano, salt, onion, and garlic)
- a bay leaf
- a dash of cinnamon
Directions:
- Chop carrots into coins, potatoes into cubes
- Boil in the chicken stock in a big pot until tender
- Chop onion and pepper
- Sautee in olive oil and butter, with salt and pepper
- Add chicken and brown, shaking on Chipotle however you want
- Put big pot down to medium-low heat
- Stir in cream of chicken soup and can of tomatoes
- Put chicken, onion, and pepper mixture into pot
- Season with bay leaves, Cajun seasonings, and more Chipotle sauce
- Spice with a dash of cinnamon!
- Cook until flavors blend to suit your palate
Serve with buttered toast.
