Crispy Cinnamon Granola
Makes about 5 cups
Toast on a large cookie sheet (17x14" with tall sides, or broling pan) for about 15 minutes (at 300 F):
- 3 cups oats
Measure and set aside:
- 1/2 cup coconut
- 1 cup crisped rice cereal
- 1/2 cup chopped walnuts
Heat in a small saucepan for 5 minutes:
- 1/4 cup vegetable oil
- 1/4 cup honey
- 1/2 tablespoon brown sugar
- 3/4 teaspoon cinnamon sugar
adding at the end:
- 1/4 teaspoon vanilla
Add to dry ingredients, and stir until coated. Spread on baking sheet. Bake, stirring frequently, for about 20 minutes.
Add (optional):
- 1/2 cup raisins
