Simple Beef Roast

Peel

  • a few large carrots

and scrub and cube

  • a few large potatoes

Quarter

  • one large onion

In large Braising pan, in

  • olive oil

brown

  • 1 lb beef chuck roast

adding

  • salt
  • black pepper
  • garlic powder
  • worcestershire sauce

to taste. Add vegetables and enough liquid:

  • a cup of water
  • something Guinness-like (some sugar, lots of acid) or
    • 1/2 cup vinegar
    • a little bit of brown sugar

to keep beef from drying out.

Also, add

  • a bay leaf

Simmer covered for a few hours, until the beef is tender and the veggies soft.

Make the juice into a gravy with flour/butter/mlik.
