Yellow Chicken Curry
Great with noodles:
In a 12 inch saute pan (with lid) add:
- less than a tablespoon vegetable oil
- diced onions
Then add:
- One big chicken thigh on the bone
- a finely sliced jalapeño (avoid jalapeño burns)
- yellow curry spice (half a package)
- a pinch of cardamom
- salt and fresh ground black pepper
Get that stewing and add:
- finely diced tomato
In the middle (of the 45-90 min cooking) add:
- sliced carrots
A little later add:
- cubed potatoes (not too small)
Near the end (like 45-90 minutes, I forget) add:
- a tablespoon brown sugar
Pull it off the heat and add:
- sour cream
- shredded coconut
before serving.
