Yellow Chicken Curry

In a 12 inch saute pan (with lid) add:

  • less than a tablespoon vegetable oil
  • diced onions

Then add:

  • One big chicken thigh on the bone
  • a finely sliced jalapeño (avoid jalapeño burns)
  • yellow curry spice (half a package)
  • a pinch of cardamom
  • salt and fresh ground black pepper

Get that stewing and add:

  • finely diced tomato

In the middle (of the 45-90 min cooking) add:

  • sliced carrots

A little later add:

  • cubed potatoes (not too small)

Near the end (like 45-90 minutes, I forget) add:

  • a tablespoon brown sugar

Pull it off the heat and add:

  • sour cream
  • shredded coconut

before serving.
